Tasty Sweet Potato Fries

Unfortunately for my waistline (and wallet when in a restaurant) I’m a big fan of sides, I love all the extras that make a meal that bit more special, whether it’s samosas with a curry or guacamole and fajitas, I think the pairing of food is part of meal time fun.

One of my favourite add-ons has always been sweet potato fries. They complement any dish and are so packed with goodness too. Sweet potato is so versatile but this foolproof method is my favourite way to enjoy it. The fries take minutes to prepare, and because they’re baked in the oven, they’re not too unhealthy either. I love seasoning mine with smoked paprika for that extra flavour punch, this also makes them the ideal accompaniment to everything from Mexican food to burgers.

Ingredients…

(Serves 2)

1 very large sweet potato

Olive oil

Smoked paprika

Salt and pepper

How to…

  1. Preheat the oven to 200/220°C. Slice the potatoes into rounds then cut into thin rectangles.
  2. Pat off any excess moisture with kitchen towel then put the sweet potato in a large bowl and drizzle on oil.
  3. Sprinkle on paprika and season with salt and pepper then stir to thoroughly coat the sweet potato in the flavours.
  4. Spread out on a large tray lined with baking paper, then cook in the oven for 25-30 minutes.
