I know mushrooms can be a very devisive food, but in our house, they’re beloved by all. We have them in everything – stews, curry, bolognese, you get the picture. However, in today’s recipe, rather than just being an undervalued extra, mushrooms are the stars of the show.
Smothered in creamy dairy-free garlic sauce, they taste like such a treat and even better, take only 10 minutes from start to finish, what’s not to like?
We served ours with jacket potatoes to make a great, hearty meal, but they’re equally delicious on toast. Just be sure to cook enough as you’re sure to want seconds!
Ingredients…
(For 2 portions)
8 mushrooms
2 gloves of garlic
Half a carton of Oatly single cream substitute
Large knob of Vitalite Dairy Free
Black pepper
Parsley to serve
How to…
- Slice the mushrooms then melt the Vitalite over a medium heat.
- Fry the mushrooms until starting to brown. Add crushed garlic and pepper.
- Pour over the Oatly, stir then turn down the heat and allow the sauce to thicken.
- Spoon onto jacket potatoes or toast and garnish with parsley if you wish.
